Tempura are fritters of Japanese origin which are extremely light because they are low in fat and that can be made with all kinds of vegetables, shrimps, fish, flowers or fruits. The main criteria to make them successful is to make the dough with ice water because it is the thermal shock between the cold dough and the frying oil that gives an airy donut. The water can be still or carbonated and possibly replaced by beer.

Ingredients

120 grams
water
15 centiliters
egg yolk

Acacia flower

Sunflower oil
  1. In a bowl, mix the flour and ice water to obtain a homogeneous paste.
  2. Incorporer un jaune d'oeuf et une pincée de sel.
  3. Faire chauffer l'huile et tremper délicatement les fleurs qu auront été recouvertes de pâte mais pas trop de façon que l'on puisse voir la structure de la fleur une fois cuite.
  4. Faire frire 2mn maximum et déposer les beignets sur du papier absorbant. Saupoudrer de sel ou de sucre selon qu'ils seront servis à l'apéritif ou en dessert.
