- Peel the clementines, remove the small white skins and separate the fruits in wedges.
- Keep 5 peels which will be blanched for 5 minutes in boiling water.
- Allow them to cool, drain them and cut them into thin strips.
- Add sugar to the water and bring to boil for 5 mins.
- Add the clementines wedges and peel strips.
- Leave the the jam for to cook for 35 minutes. To check the setting point, drop a little syrup onto a previously chilled plated and watch if it solidifies.
- Wash and sterilize the jar before filling them with hot jam. Close and make them cool down by turning them over for better preservation.
