The chocolate mousse is a die-for dessert with an intense chocolate flavor which is simply irresistible.

This simple recipe is egg-free ! The chocolate mousse will definitely be much better if it is prepared on the day before!

You can also modify this recipe and replace the dark chocolate with white chocolate or hazelnut chocolate.

Ingredients

Metric US
Black baking chocolate
300 grams
milk
20 centiliters
single cream
40 centiliters
icing sugar
50 grams
  1. Start by breaking your chocolate into small pieces. Next pour chocolate in a small bowl with the milk which you will cook in a water bath using a pan of boiling water. As the chocolate starts to melt and mix till you have a smooth and homogeneous texture. Keep for later use and make sure your chocolate cools but does not solidify.
  2. In a large mixing bowl, whisk the heavy cream till you obtain to obtain a whipped cream. When the mixture is "stiff", don't whisk any longer or your cream will emulsify into butter. Add a little sugar to the whipped cream before you whisk one last time. You can use the traditional hand whisk or an electric mixer.
  3. Using a spatula, fold your warm chocolate in your whipped cream. This is the most technical part of the recipe, the chocolate should not be too hot (to avoid liquefying the whipped cream), nor too cold. The mixture should have a homogeneous color and we should no longer distinguish between the white shipped cream and the black chocolate and get a nice brown chocolate colour.
  4. Your chocolate mousse is finally ready. Refrigerate (wrap with cling film) till serving time the next day.
