Ingredients

Ground Cinnamon
1.5 tablespoons

3 teaspoons
  1. Peel the apples (prefer acid apples), cut them into 8 wedges. Seed the quarters.
  2. In a small bowl, beat the egg yolks.
  3. Mix the sugar with the cinnamon and pour the mixture on a plate.
  4. Roll out the puff pastry on a board. Cut the strips into 5 cm wide lengths. Divide the strips in halves (a piece of the dough should be able to roll up an apple wedge).
  5. Roll an apple wedge in a small strip of puff pastry. Soak half of it in the egg yolks and then in the sugar-cinnamon mixture. Place directly on an oven rack (covered with baking paper or baking mat). Proceed till the last wedge.
  6. Oven Bake in the oven at 356 °F (180 °C) for about 20 minutes.
