This hearty north-african recipe is a salty-sweet dish often made from meat, chicken, lamb or mutton. Cooked in a stew, the tajine can be embellished with candied or dried fruits, like apricots or olives.
You can include chickpeas, semolina or bulgur. This dish can be easily modified according to your culinary preferences.

- Unsalted butter
- 10 grams
- spicy stock cube
- 2
- Tajine spices
- 2 tablespoons
- salt, pepper
- 1 pinch
- In a saucepan, add 75cl of water to prepare the broth. Add a mixture of tagine spices. Keep for later use.
- Next cook the chicken breasts in another saucepan with butter. Be careful to let them brown. Once they are browned you can turn off the heat and peel and cut into thin strips your vegetables and apples.
- Add them in a saucepan and add the broth that you have prepared in advance. On medium heat or high heat, leave to simmer for 20 minutes. Season with salt and pepper.
- Once the 20 minutes are over, turn down the heat and cook for 30 minutes. Check the consistency of the sauce. If it is too liquid, add cornstarch that you have diluted in advance in milk to make it creamier. Leave to simmer for 5 minutes and rectify the seasoning
- Serve hot in the tajine dish with wheat semolina or bulgur as a main course, sprinkle your dish with coarsely chopped coriander, you can only enjoy! Bon appétit gourmets.
