This Mediterranean recipe is a real classic which gives a soft lamb which can be made with the leg as well as a shoulder. The cooking time can be extended to as long as 7 hours by covering the lamb halfway  so that it can be stewed.

  1. Insert the garlic cloves in the lamb. Salt and pepper.
  2. Slice the onions and place them on the bottom of the oiled gratin dish or the broiler pan of your oven
  3. Add a layer of thick potato slices. Salt and pepper.
  4. Next, lay the lamb.
  5. Pour over a drizzle of olive oil and water till 3/4 vegetables.
  6. Oven bake for 4 hours at 120°C (248 °F)
