Discover the delicious baba ganoush recipe, a vegetarian typical recipe of Levantine cuisine mixing cooked eggplant puree, sesame paste, olive oil, lemon juice.

Here is a very easy baba ganoush version for about 4 people. For maximum flavor, choose organic ingredients. You will find ready-made tahini sesame paste in small oriental grocery stores, delicatessens or organic stores.

Serve the baba ganoush as a mezze or as an aperitif!

Ingredients

  1. Preheat the oven to 180 ° C.
  2. Bake the eggplants (cut in half lengthwise) for 30 minutes in the oven. Be careful, the eggplants must be placed in a baking sheet covered with aluminum foil, the flesh against the aluminum.
  3. Once cooked, remove the eggplants from the oven and leave to cool.
  4. Scrape the pulp with a spoon and remove the skin.
  5. In a salad bowl, crush the eggplant pulp with a fork.
  6. Drizzle with the juice of 2 lemons.
  7. Add the sesame paste, olive oil and crushed garlic cloves. Mix well.
  8. Add salt and pepper to taste.
  9. Arrange the baba ghanousch in a large salad bowl or a wooden bowl, add a large drizzle of olive oil on top (as for the hummus).
  10. Optional: garnish with a few sprigs of chopped parsley, chopped cilantro or a few spices of your choice (cumin, coriander powder, paprika or ground pepper).
  11. Enjoy cold in slices on bread or with Lebanese pita bread. (To do as at the Lebanese restaurant, serve the baba ganoush with other mezzes: chickpea hummus, vine leaves, tabbouleh, etc.). Enjoy!
