- Cut the parchment paper into large 20cm x 20cm squares.
- Place the previously washed and drained tomato and courgette slices and the fish on top.
- Season with salt, pepper, sprinkle with crumbled thyme and drizzle with olive oil.
- Preheat the oven to 200°C (392 °F).
- Close the papillotes and put them in the oven for 20 minutes.
