The tarte tatin is said to be the result of a mistake made by the Tatin sisters who ran an inn at the end of the 19th century. Clumsily they would have simply forgotten to put the dough at the bottom of their tart pan and added it on top, thus obtaining exceptionally preserved apple flavours after baking and flapping tart over. Since then, all amateur and professional pastry chefs have be seduced by this wonderful recipe and cooks have even used it in sweet and savoury dishes. The apples to be used to make a pie are King of Pippins, Pink Lady and Golden.

  1. Gently fry the chopped onions in oil to make a fondue and then add salt, pepper and chopped ginger.
  2. Preheat your oven to 200° C.
  3. Cut circles in the dough with a diameter of one to two centimetres larger than the baking pans.
  4. Place the sliced apples, thinly sliced duck breast and onion fondue in the small individual baking pans and cover with a circle of dough.
  5. Cook for 20 to 25 minutes, then remove from the pans and serve with a few roquette leaves, pine nuts, etc...
