Talon de jambon cru

tomato concentrate
1 teaspoon
Canned red kidney beans
800 grams
Fresh basil
5 sheets
salt and pepper
water
  1. Commencer par éplucher et découper séparément tous les légumes en petits cubes.
  2. Faire revenir à la cocotte et à l'huile les pommes de terre puis rajouter tous les autres légumes, le talon ou l'os de jambon cru, l'ail écrasé, le persil, le thym et le laurier.
  3. Ajouter ensuite l'eau, le concentré de tomate, le sel et le poivre.
  4. Faire mijoter doucement durant 2h.
  5. Mixer ensuite 3/4 des haricots rouges et les ajouter avec les haricots entiers à la soupe que l'on finit de cuire durant encore 1h.
  6. Rectifier l'assaisonnement.
  7. Parsemer de basilic haché au moment de servir.
