Tempura are fritters of Japanese origin which are extremely light because they are low in fat and that can be made with all kinds of vegetables, shrimps, fish, flowers or fruits. The main criteria to make them successful is to make the dough with ice water because it is the thermal shock between the cold dough and the frying oil that gives an airy donut. The water can be still or carbonated and possibly replaced by beer.

Ingredients
- Flour
- 120 grams
- water
- 15 centiliters
- egg yolk
- 1
- Acacia flower
- 16
- Salt or sugar
- Sunflower oil
- In a bowl, mix the flour and ice water to obtain a homogeneous paste.
- Stir in one egg yolk and a pinch of salt.
- Heat the oil and gently dip the flowers that have been covered with the batter, but not too much so that you can see the structure of the flower once cooked.
- Fry 2 minutes maximum and place the fritters on absorbent paper. Sprinkle with salt or sugar depending on whether they will be served as an aperitif or as a dessert.
