According to legend, the tarte tatin owes its name to two sisters named Tatin, one of them would have overturned an apple pie that she would have clumsily left to cook for too long and tarte tatin appeared!

This flipped dessert is stunning : hot, fluffy and caramelized at once, it is a condensation of pleasure!

Fruits (usually apples) should be caramelized in butter and sugar before baking the pie!

This recipe is made  with a readymade puff pastry ready, if you have patience, it is best to make your puff pastry yourself.

  1. Start by preparing your ingredients and preheat your oven to 200 ° C.
  2. Using a peeler, peel the apples, cut them in halves, and remove the cores with the tip of a kitchen knife.
  3. Melt salted butter in a tart pan over low heat. Then sprinkle the powdered sugar over it.
  4. Mix the ingredients thoroughly with your spatula until everything is homogeneous. Then let the mixture color to make brown caramel. It is advisable not to let the texture color for too long if you don't want to completely fail you Prefer a golden color. Add only a small trickle of water at the end.
  5. Then add the cut apples on the warm caramel in the mold. Be careful to keep them in their original position. As you add the apples, you can wedge them against each other so they stand between them.
  6. Let the apples cook on high heat for 10 minutes. The apples will gradually reduce during cooking and will absorb more and more caramel.
  7. On a worktop, place your puff pastry. Use a pie circle to cut the edges of your dough. the goal is to cover apples uniformly.
  8. Once the dough is cut, place it on the cooked apples with your hands. It is advisable to put the dough on the apples while they are still hot.
  9. Place the dough on the pie pan and pressing the it on the edges. Using the palm of your hand, squeeze the dough well make it adhere to the apples. Make sure there are no gaps. Be careful not to pierce the dough.
  10. Before baking, make a small hole at the top with a knife so that the steam is clear during cooking or make mini-decorative notches. Bake at a temperature not exceeding 200 °C for 30 to 35 minutes.
  11. Once baking is over, you will need to take a serving dish, put it on the mold and turn the pie in a fast movement. You can finally uncover the pie, lifting the baking pan.
  12. Serve tarte tatin warm with a drizzle of sour cream at tea time, a treat!
