These shortbreads are of Alsatian origin and are particularly popular during the Christmas and New Year holidays. You can make several different jams and even make them with spreads. A treat for young and old!

Ingredients
- Butter
- 150 grams
- Sugar
- 50 grams
- Vanilla extract
- egg yolk
- 1
- Flour
- 250 grams
- Powdered almonds
- 50 grams
- grated lemon peel
- 1/4
- Jam
- icing sugar
- In a large bowl, mix the softened butter with the sugar and vanilla until you obtain a whitish cream.
- Then add the flour, powdered almonds and lemon zest.
- Knead the dough until it forms a ball, which is then placed in the refrigerator for at least 30 minutes.
- Flour the work surface and roll out the dough, which should not be too thin.
- Preheat the oven to 175° C.
- Cook the shortbread for 12 to 15 minutes. They must remain white.
- Put the jam in the middle of the larger shortbreads and stick the smaller ones on top and lightly sprinkle the whole thing with icing sugar.
