Ingredients

3 Kilograms
Butter
50 grams
water
1 glass
white wine
1 glass

Ground veal meat

chair à saucisse
100 grams

Canned chestnut
100 grams
chopped parsley
2 tablespoons

  1. Tremper la mie de pain dans le bol de lait.
  2. Mélanger le veau haché, la chair à saucisse, l'oignon, l'échalote et l'ail hachés puis ajouter la mie de pain essorée.
  3. Incorporer les marrons en petits morceaux, le persil haché, l'oeuf battu puis saler et poivrer.
  4. Préchauffer le four à 170°.
  5. Beurrer la dinde puis la saler et poivrer et enfin la remplir de farce.
  6. Fermer l'ouverture du côté croupion à l'aide des cure-dent et bien ficeler les pattes et le croupion afin de maintenir l'ensemble serré.
  7. Poser la dinde dans un plat à four avec l'eau et le vin.
  8. Placer ce plat dans la lèche-frite dans laquelle on aura versé 4 à 5 verres d'eau afin d'éviter le déssèchement de la volaille.
  9. Faire cuire 1h à 170° puis 1h30 à 150° en arrosant de jus toutes les 30mn.
  10. Sortir la dinde du four et la laisser reposer 10mn avant la découpe et le service.
