Ingredients
- mussels
- 2.5 Kilograms
- chopped tomatoes
- 500 grams
- white wine
- 30 centiliters
- garlic cloves

- Mixed herbs bouquet (thym, bay...)

- salt, pepper
- Sort your fresh mussels (discard those with open shells or those with shells which are broken).
- Clean the mussel shells (debeard the mussels, remove the algae and scrape the shell with the flat side of a knife while running under water). Rinse several times. Keep for later use.
- Wash, peel and finely chop garlic and onions.

- Then add the white wine to the saucepan and leave to simmer for 2 minutes over medium heat.
- Then add the tomatoes, and the bouquet garni. Season with salt and pepper.
- Leave to simmer over medium heat until mussels opens. Repeat seasoning if necessary
- You can serve the mussels with a salad and buttered toast with a little lemon!!
