Ingredients

Metric US
mussels
2.5 Kilograms
chopped tomatoes
500 grams
white wine
30 centiliters
garlic cloves

Mixed herbs bouquet (thym, bay...)

  1. Sort your fresh mussels (discard those with open shells or those with shells which are broken).
  2. Clean the mussel shells (debeard the mussels, remove the algae and scrape the shell with the flat side of a knife while running under water). Rinse several times. Keep for later use.
  3. Wash, peel and finely chop garlic and onions.

  5. Then add the white wine to the saucepan and leave to simmer for 2 minutes over medium heat.
  6. Then add the tomatoes, and the bouquet garni. Season with salt and pepper.
  7. Leave to simmer over medium heat until mussels opens. Repeat seasoning if necessary
  8. You can serve the mussels with a salad and buttered toast with a little lemon!!
