Applesauce is a classic French cuisine dish! There is nothing easier to make than a homemade applesauce and what a delight to eat it hot with cottage cheese!
For a successful applesauce, prefer apple varieties which will melt well when cooked, such as Chanteclerc, Reinette or Belle de Boskoop.
Did you know that apples contain pectin which have health benefits? This plant-based carbohydrate acts on cholesterol and blood sugar levels, regulates intestinal transit and has a hunger-suppressing effect!
This recipe contains 10 cl of agave syrup (which is less aggressive for health than powdered sugar) for the sweetening effect and maple syrup to accompany, these sugar amount can be modified or removed for people with diabetes for instance…

Ingredients
- Apples
- 1 kilogram
- agave syrup
- 20 centiliters
- water
- 20 centiliters
- vanilla pod
- 1
- lemon (zest and juice)
- 1
- Fresh white cheese
- 200 grams
- maple syrup
- 6 teaspoons
- Wash, peel, cut apples in 2 or 4 and remove the core and seeds using your knife. Then roughly cut the apples into small pieces. Put them in a bowl in which you will pour in some lemon juice to prevent the apples from oxidizing.
- In a saucepan, pour water, agave syrup, lemon zest and a vanilla pod that you have previously slit and scraped. Boil the water. Once the water boils, divide the apples in the pan,
- Immediately reduce the heat and cook on a low heat for 20 to 30 minutes. Stir from time to time. Turn off the heat, remove the vanilla pod. Your applesauce is ready.
- You can choose to taste your applesauce as is or mix it to obtain a finer texture.
- My advice for an excellent and tasty dessert is to serve your stewed hot sauce in pretty cups, with a large tablespoon of white cheese over and top with maple syrup. A real treat!
