Ingredients
- In a saucepan filled with cold, unsalted water, cook the lentils as directed on the package.
- Rinse and cut the cucumber into small cubes.
- Peel and finely slice the shallot.
- Cut the mackerel into pieces.
- In a bowl, make a salad dressing by mixing mustard, olive oil, vinegar, pepper and salt.
- In a small pot of boiling water cook the soft-boiled eggs to your liking. Then put them under cold water and remove the shells.
- In a salad bowl, mix the lentils with the cucumber, shallot, mackerel and salad dressing.
- Serve the mackerel lentil salad on the plates. Arrange the eggs cut in halves.
