White beans
150 grams
Oignons moyens

Poireaux moyens

garlic cloves

zucchini

potatoes

Tomatoes

Haricots verts
150 grams
Coquillettes
80 grams
Olive oil
salt and pepper
10 sheets
Grated Parmesan cheese
180 grams
  1. Faire cuire les haricots blancs dans une grande casserole d'eau non salée durant 30mn.
  2. Pendant ce temps faire suer à l'huile d'olive dans un faitout l'oignon en dés, les poireaux émincés et l'ail haché.
  3. Ajouter les carottes, les courgettes et les pommes de terre pelées et coupées en cubes, les tomates pelées, épépinées en dés.
  4. Couvrir de 3l d'eau puis ajouter les haricots blancs égouttés, le sel et le poivre et faire cuire 45mn.
  5. 10mn avant la fin de la cuisson, rajouter les haricots verts en petits morceaux et les coquillettes.
  6. Au moment de servir la soupe, incorporer le basilic ciselé et le parmesan.
