This beef-based recipe from Burgundy (Bourgogne in french), hence its name, is a treat! Composed of several ingredients including beef, mushrooms, onions and bacon, Beef Bourguignon can be accompanied with vegetables or legumes. Bourguignon beef requires a very long cooking, you will need to arm yourself with patience to taste the delicious  tender and melting beef pieces.

Ingredients

Metric US
Beef (for bourguignon)
1.5 Kilograms
bacon bits
200 grams
Unsalted butter
60 grams
little onions
10
carrots

garlic cloves

Flour
60 grams
red wine
2 Liters
mushrooms

Mixed herbs bouquet (thym, bay...)

  1. Start by cutting the beef in about 4 cm pieces, peel the onions, peel the carrots and slice them, peel the garlic and remove the germ.
  2. In a large saucepan, melt a butter knob and add the whole onions and bacon. Fry the whole stirring regularly until they are colored. Set aside and keep warm.
  3. On high heat, cook the meat in the same saucepan. Stir in the previously cut carrots and cook for 5 minutes
  4. Once the meat starts to brown, add 60g of flour little by little and leave to brown while stirring.
  5. In another saucepan, boil 50cl of water and add two cubes of meat stock. When the broth is ready, pour it into another container, be sure to remove the juices.
  6. You can now put the bacon and onions in the saucepan, with the red wine. Season with pepper and salt, add a bouquet garni and garlic. Cover and leave to simmer for three hours.
  7. Once the pre-requisite time has elapsed, put the cut out mushrooms and cook for another 30 minutes.
  8. Your Beef Bourguignon is now ready, you can now serve it with vegetables, mashed potatoes, tagliatelle or steamed potatoes.
