This dessert, also known as egg flan or caramel cream or caramel pudding, is a very popular dessert in Latin America where it is served with milk jam. This variant of crème brulée is best enjoyed very fresh.

Ingredients

milk
1 liter
Eggs

Vanilla extract
1 tablespoon
Sugar
170 grams
  1. Break your eggs in a large bowl. Then add 100 g of sugar and mix well with a whisk.
  2. Heat the milk to medium temperature and add the vanilla essence.
  3. Pour your hot milk over the sugar-egg mixture and whisk.
  4. Preparation of the caramel: pour 3 tablespoons and 70 g of sugar into a saucepan. Stir lightly and cook over low heat until a slightly liquid caramel is obtained.
  5. Pour your caramel into a mold and spread it out. Pour your egg-milk-sugar into the mold.
  6. Preheat your oven to 150-180 °C. Put your flan in a water bath for 45 mins - 1 hour.
  7. Put in the fridge for 2 hours then remove from the pan.
