These small Mauritian sweet potato dumplings, coated in sesame and stuffed with a dab of red bean paste are of Chinese origin. They are called “Gato Zinzli” in Mauritius (zinzli = sesame in Mauritian Creole). Usually served for dessert, these Sino-Mauritian fried doughnuts can also be suitable for afternoon tea. Soft on the inside and crispy on the outside, these little donuts are delicious and easy to make. Discover this recipe very popular in Mauritius for its local flavors!

Ingredients

Metric US
Sticky rice flour
124 grams
Wheat flour
130 grams
icing sugar
75 grams
Sweet potato
350 grams
Red beans paste
450 grams
dietary bicarbonate
1/2 teaspoon
Boiling water
250 milliliters
White sesame seeds
1/2 cup
Frying oil
  1. Wash the sweet potatoes, steam them, peel and mash them.
  2. In the meantime, soak the white sesame seeds in boiling water, then drain them.
  3. Mix the icing sugar with the boiling water.
  4. In a deep glass bowl, mix the 2 types of flour. Make a well and gradually add the sugar water to obtain a sticky mixture.
  5. Add the sweet potato puree, mix gently until you obtain a smooth paste.
  6. Make small balls with the place and place a dab of red bean filling in the center of a piece of dough. Make sure the bean paste is well coated.
  7. When you get nice smooth balls, coat them with sesame seeds.
  8. Heat the oil in a frying pan. When the oil is hot, fry the dough balls over medium heat, until golden brown.
  9. Place in a plate on absorbent paper.
  10. These sesame balls are better served hot or warm.
