- The preparation takes place over 2 days.
- 1st day: wash and drain the lemons. Slice them finely, seed them and cut them in half.
- Leave them to macerate in 1 liter of cold water for 24 hours.
- 2nd day: drain the lemons and bring them to boil with 1l of water during 6 mins. Pierce the fruit peel which needs to be soft.
- Drain the fruits.
- Heat the 2l of maceration water with the sugar and bring to boil for 10 minutes. Add the lemons and cook at high temperature while stirring for 45 minutes.
- Put in sterilized jars. Close and turn them around to get rid of excess scum for better conservation.
