The town of Menton has made a local specialty of this jam in which we find fruit pieces unlike traditional marmalade.

Ingredients

Metric US
lemons
2 Kilograms
water
2 Liters
jam sugar
2 Kilograms
  1. The preparation takes place over 2 days.
  2. 1st day: wash and drain the lemons. Slice them finely, seed them and cut them in half.
  3. Leave them to macerate in 1 liter of cold water for 24 hours.
  4. 2nd day: drain the lemons and bring them to boil with 1l of water during 6 mins. Pierce the fruit peel which needs to be soft.
  5. Drain the fruits.
  6. Heat the 2l of maceration water with the sugar and bring to boil for 10 minutes. Add the lemons and cook at high temperature while stirring for 45 minutes.
  7. Put in sterilized jars. Close and turn them around to get rid of excess scum for better conservation.
