- Begin by pre-cooking the lentils with water.
- Start by peeling the carrot and onion. Cut into thin slices for a short cooking time.
- Heat a drizzle of oil in a saucepan and fry the vegetables over medium heat. Stir regularly.
- Shortly after, add the bacon in a pot and cook for 2 to 3 minutes.
- Once the bacon is golden brown, add the cooked lentils.
- Add the lentils on medium heat while continuing to stir and mix well with the fat obtained from the bacon. Stir for 1 to 2 minutes.
- Once the lentils have been well mixed with the bacon fat, add water to the lentils and cover.
- Add the aromatic seasonings to give some flavour to the lentils: garlic, clove, thyme and bay leaves.
- Bring to boil until the broth thickens (30 to 40 minutes).
- Once the soup has cooked for this lapse of time, remove the thyme, garlic clove, bay leaf and cloves. Season to taste!
- Some prefer to blend the lentils to obtain a soup with a homogeneous texture whereas others prefer to a slightly granular texture. It's up to you to choose what you prefer!
- For those who opt for a blended soup, mix the lentils, and add cream to obtain a homogeneous soup.
- Serve hot and enjoy as a starter… Bon appétit !
