Ingredients

  1. Begin by pre-cooking the lentils with water.
  2. Start by peeling the carrot and onion. Cut into thin slices for a short cooking time.
  3. Heat a drizzle of oil in a saucepan and fry the vegetables over medium heat. Stir regularly.
  4. Shortly after, add the bacon in a pot and cook for 2 to 3 minutes.
  5. Once the bacon is golden brown, add the cooked lentils.
  6. Add the lentils on medium heat while continuing to stir and mix well with the fat obtained from the bacon. Stir for 1 to 2 minutes.
  7. Once the lentils have been well mixed with the bacon fat, add water to the lentils and cover.
  8. Add the aromatic seasonings to give some flavour to the lentils: garlic, clove, thyme and bay leaves.
  9. Bring to boil until the broth thickens (30 to 40 minutes).
  10. Once the soup has cooked for this lapse of time, remove the thyme, garlic clove, bay leaf and cloves. Season to taste!
  11. Some prefer to blend the lentils to obtain a soup with a homogeneous texture whereas others prefer to a slightly granular texture. It's up to you to choose what you prefer!
  12. For those who opt for a blended soup, mix the lentils, and add cream to obtain a homogeneous soup.
  13. Serve hot and enjoy as a starter… Bon appétit !
