The carrot cake is a typical American specialty that I modified for more softness by incorporating banana.

Ingredients

Metric US
Egg
3
Powdered sugar
150 grams
cinnamon
1.5 teaspoons
nutmeg
3/4 teaspoons
liquid vanilla
1.5 teaspoons
Sunflower oil
110 grams
Flour
150 grams
baking powder
3/4 packets
carot
2
Banana
1/2
Crushed nuts
75 grams
  1. In a bowl, whisk together the sugar and eggs until the dough is white.
  2. Then add the spices, vanilla and oil.
  3. Gently pour in the flour and yeast and mix to obtain a smooth dough.
  4. Add grated carrots, mashed banana and nuts and mix again.
  5. Preheat oven to 175°C.
  6. Cook in the oven for 30 to 40 minutes and prick to check the cooking.
  7. This cake can be kept for several days.
