The name rock obviously comes from the irregular shape of this cake but why Congolese? Certainly by the tropical origin of the coconut. Depending on its size, it can be served either as a snack at tea-time or as a small cake.

Ingredients

Metric US

Powdered sugar: 250 grams; 1.11 cups
grated coconut: 250 grams; 2.5 cups
Egg white: 4; 4

Mix sugar and coconut and incorporate the unbeaten egg whites to obtain a very thick paste.
Line a baking sheet with parchment paper, and drop coconut ball sized as you wish.
Bake at 180 ° C for 12 to 22 minutes according to the size of the rocks.
