  1. Faire revenir à l'huile d'olive l'oignon émincé puis le céleri et la carotte en tout petits dés.
  2. Add the minced beef and ham cut into small pieces and leave to brown.
  3. Reduce the heat and add the flour that is incorporated by mixing for 2 to 3 minutes.
  4. Pour the wine, leave to evaporate over high heat then add the tomatoes with their juice, salt, pepper, herbs and spices and simmer over low heat for 20 minutes.
  5. Meanwhile, prepare the béchamel by gently melting the butter in the pan, to which is added the flour that should thicken but not color.
  6. Pour the milk little by little while mixing with the whisk so that the sauce thickens without attaching to the bottom of the pan.
  7. Salt and pepper.
  8. Preheat the oven to 200 °C.
  9. Oil the oven dish and add a thin layer of béchamel.
  10. Assemble lasagna by alternating pasta sheets, bolognese sheets, béchamel sauce and parmesan, three times in a row.
  11. Cover the top of the dish with a final layer of béchamel, grated cheese and butter nuts and bake for about 25 minutes until the lasagna is golden brown.
