  1. Peel the sweet potato and then cut into pieces.
  2. Cut the Brussels sprouts into 4 pieces.
  3. In a sauté pan heated over high heat with a drizzle of olive oil, sauté the sweet potato and Brussels sprouts for 15-20 minutes, stirring regularly until the sweet potato is tender...
  4. While the vegetables are cooking, prepare the garlic (peel and finely chop) and the pear (peel and cut into pieces).
  5. Cut the smoked bacon into pieces.
  6. Chop the coriander
  7. Add the smoked breast, garlic and pepper to the vegetables pan and sauté for a few minutes until the bacon is golden. Season with salt and pepper.
  8. Serve warm sprinkled with coriander.
