Metric US
Pâte à pain d'épices
Dark Honey ( like chestnut or silver fir honeys)
170 grams
baking powder
1/2 packet
Unsalted butter
70 grams
Egg
1
cinnamon powder
1 teaspoon
5 spices
1 teaspoon
Flour
320 grams
Glaçage
Egg white
1
lemon (juice)
1
icing sugar
170 grams
  1. In the robot bowl, turn off the heating mode, add the egg and mix at speed 2 for 30s.
  2. Then stir slowly (still at speed 2) the flour, yeast and spices mixture until you obtain a homogeneous paste.
  3. Shape the dough into a ball and let it refrigerate for 30 minutes.
  4. Roll-out the dough with floured rolling-pin to a 1/2 cm (0.2 in) thickness.
  5. Cut out 8 men of about 8cm tall. Place them on a baking tray protected by baking paper. Bake at about 160 ° for 8 minutes while monitoring the cooking.
  6. Leave your gingerbread men to cool.
  7. Meanwhile prepare the frosting: pour a drizzle of lemon juice to the egg white, beat with a hand mixer while gradually adding the powdered sugar till you obtain a stiff mixture.
  8. Using a pastry bag or a pastry pen, decorate your gingerbread men, the icing can even be colored if you wish.
