Ingredients
- Dark Honey ( like chestnut or silver fir honeys)
- 170 grams

Glaçage
- In the robot bowl, turn off the heating mode, add the egg and mix at speed 2 for 30s.
- Then stir slowly (still at speed 2) the flour, yeast and spices mixture until you obtain a homogeneous paste.
- Shape the dough into a ball and let it refrigerate for 30 minutes.
- Roll-out the dough with floured rolling-pin to a 1/2 cm (0.2 in) thickness.
- Cut out 8 men of about 8cm tall. Place them on a baking tray protected by baking paper. Bake at about 160 ° for 8 minutes while monitoring the cooking.
- Leave your gingerbread men to cool.
- Meanwhile prepare the frosting: pour a drizzle of lemon juice to the egg white, beat with a hand mixer while gradually adding the powdered sugar till you obtain a stiff mixture.
- Using a pastry bag or a pastry pen, decorate your gingerbread men, the icing can even be colored if you wish.
