The frittata is an omelette of Italian origin but unlike a traditional omelette which is fully cooked in the pan, this version is also baked so that  it so that it is lightly grilled.  This omelette can be enjoyed hot or cold, as an aperitif, starter or dish and if you are a fan of bodybuilding with high protein needs, this portion will be be for one person . Ingredients

Metric US
Frozen Ratatouille
600 grams
Button mushrooms
100 grams
Eggs

Egg whites (for high protein meal)

30 grams
  1. Emincer les oignons que l'on fait blondir à la poêle dans un peu d'huile d'olive.
  2. Ajouter ensuite la ratatouille et les champignons émincés et faire cuire une dizaine de mn de façon à faire évaporer l'eau.
  3. Battre les oeufs entiers (plus les blancs pour le régime hyper protéiné) avec sel, poivre, persil et basilic hachés et les incorporer à la ratatouille.
  4. Verser l'ensemble dans un plat à tarte légèrement huilé. Saupoudrer de parmesan et passer à four 140° durant 45mn.
