  1. To start with, you need to crumble speculoos using a rolling pin or a blender. Be careful not to crush them to the point of becoming a powder. You can choose to use different Oreo cookies, or small butters cookies. It's up to you.
  2. In a saucepan or microwave, melt butter. In a large bowl, add the butter and the crumbled cookies in and mix to a granulated paste.
  3. Then, put this dough in a cake mold and cover the mold with cooking paper. Be sure to spread the dough evenly in the mold. You must then put the mold in the fridge for a period of 30 minutes, to let the dough rest.
  4. In a large salad bowl, add ricotta, beaten eggs, cream, powdered sugar and a spoonful of vanilla flavor or any flavour of your choice.
  5. Once the mixture is ready. Incorporate it in the mold where the biscuits are mixed with the butter. Place your mold on the plate and bake in a 180 ° preheated oven. Cook for a period of 45 minutes.
  6. As soon as the 45 minutes have elapsed, you can leave the cheesecake once again in the oven, but this time with the oven turned off.
  7. Note that it is necessary to leave the cheesecake to rest for a minimum of 3 hours in the fridge before serving! The ideal is to prepare it the day before, or very early in the morning, before receiving your guests for lunch or supper! To serve with a coulis of red fruits like raspberry or strawberry or red currants for example.
