This muffin recipe is very simple and can be adapted to your preferences! You can choose between chocolate chip muffins, vanilla and spice, fruit or coconut muffins! These mellow muffins are as soft as you want and can be made quickly! It will only take you about 30 minutes to prepare and cook! Above all, have fun!

Ingredients
- T55 flour
- 260 grams
- Applesauce
- 130 grams
- Brown sugar
- 100 grams
- Vegetable oil
- 70 grams
- plant milk
- 100 milliliters
- cider vinegar
- 1 tablespoon
- liquid vanilla
- 1 teaspoon
- dietary bicarbonate
- 1 teaspoon
- Preheat your oven to a temperature not exceeding 180°C.
- In a mixing bowl, add flour, applesauce, brown sugar, vegetable oil, yeast. Mix vigorously with a hand or electric whisk.
- Then add the cider vinegar and mix. Add the baking soda and mix again. And finally, add liquid flour. Mix until you obtain a homogeneous and smooth paste. Then add the filling of your choice (optional); between 100 g chocolate chips, 100 g grated coconut, 2 to 3 tsp gingerbread spice mixture or 50 g candied fruit! Add the ingredient of your choice and mix.
- Then place the muffin cups and fill them up to 3/4. Place the muffin cups on an ovenproof baking sheet and place in the oven for at least 25 minutes.
- Check if cooked by inserting a blade into the centre of the muffins. You know that the muffins are finally ready when the blade comes out dry. Enjoy your muffins with delicacy at the snack or as a dessert! It's a real marvel! Enjoy!
