Do you have what is aioli? To put it simply, it’s a Mayonnaise like emulsion flavored with lots of garlic! If you follow this simple recipe to prepare this french cuisine favorite you are sure to nail this sauce! You can enjoy  it with fish broth, seafood or fish soup. It is a tradition that is perpetuated in the Southern France villages.

Ingredients

egg yolks

25 centiliters
salt, pepper

garlic cloves

  1. The sauce is prepared in this way: Peel and remove the germ from the garlic cloves and stack them in a mortar or crush them with a blender. Set aside.
  2. Then separate the white from the yolks in two containers, set aside the whites for later use.
  3. Add a drizzle of olive oil little by little to the egg yolks while whisking the mixture to obtain a homogeneous mixture. It is a sauce that takes easily and rather quickly.
  4. Add the chopped garlic to the mixture.
  5. Season with pepper, salt and a little lemon juice. It's ready !
