- Tender piece of beef (like brisket or beef cheek)

- coarse salt
- Put the water and add large pieces of meat. Skim if necessary during cooking.
- Leave to cook for 2 hours, add the cabbage (cut in 4), smoked sausages, Toulouse sausages, turnips and carrots.
- Leave to cook for another 1/2 hour and add chipolatas and potatoes.
- Continue cooking for 1/2 hour and add the chickpeas.
- Serve with mustard.
