  1. Préchauffer votre four à 170◦ C.
  2. Séparer les blancs des jaunes d’œufs.
  3. Ajouter 400 g de sucre et 1 pincée de sel aux blancs d’œufs.
  4. Battre les blancs d’œufs en neige.
  5. Tamiser la fine puis l’incorporer graduellement aux œufs avec une spatule jusqu’à l’obtention d’une pâte homogène.
  6. Verser dans un moule à Angel cake (moule tube).
  7. Mettre au four et laisser cuire 50 minutes à 170◦ C.
  8. Démouler et laisser refroidir complètement.
  9. Couper en deux ou trois parties en utilisant un couteau à dents.
  10. Garnir de confiture.
  11. Dernière étape : préparation du glaçage chocolat. Casser votre chocolat petits morceaux. Verser la crème liquide dans une casserole et faire chauffer sur feu moyen. Remuer jusqu'à avoir une crème bien lisse et brillante, on peut remettre la préparation quelques secondes sur le feu tout en remuant.   12. Recouvrir votre gâteau de votre glaçage et décorer à votre guise.
