This is a very simple pancake batter recipe to make for 4 people. In this recipe, it is not necessary to let the dough rest due to its quantity of eggs. You will enjoy it!

Ingredients

  1. Put the flour, salt and sugar in a bowl. Then make a hole in the middle and pour in the eggs previously beaten with a fork or whisk. Cover with the flour using a wooden spatula. Mix until you obtain a thick texture. Once the mixture is thick, add your cold milk as you go and continue to mix rigorously with a whisk to avoid lumps.
  2. Once the milk is mixed in, you will notice that the dough becomes fluid. If the dough is still thick, feel free to add more milk. Once you are satisfied with the mixture, add melted butter to the pan beforehand.
  3. For this recipe, you don't need to add any fat to your pan for cooking, as the batter already contains fat. Using a ladle, spread the batter in your pan, swirling it around to spread it all over the surface of the hot pan. Put the pan on the heat and let it cook until the pancake is colored light red, you now know that you have to flip the pancake. You only need one minute to cook the other side and your pancake is ready!
  4. Repeat until you run out of pancake batter. Serve your pancakes with melted dark chocolate, whipped cream, maple syrup or fresh fruit and sugar!
