Ingredients

- Coral lentils

- Provencal herbs

- Salt
- pepper
- Olive oil
- Preheat the oven to 200°C.
- In a saucepan filled with unsalted cold water, cook the lentils for 10 minutes.
- Chop the onion.
- Peel and cut the carrots into half circles.
- In a frying pan, fry the onions and carrots with a drizzle of olive oil. Add the diced tomatoes, turmeric, mixed herbs salt and pepper. Simmer for 8 minutes.
- Prepare the peppers, remove the seeds.
- In a salad bowl, mix well the drained lentils with the preparation. Taste and adjust the seasoning if necessary. Then garnish the peppers.
- Put the stuffed peppers in a baking dish with a little water in the bottom of the dish and bake for 25 minutes.
