  1. Preheat the oven to 200°C.
  2. Rinse the asparagus, cut the tip and then peel the stems.
  3. Roll out the puff pastry and cut 12 similar strips.
  4. Wrap each asparagus stem in a slice of bacon and then twist a strip of puff pastry along the asparagus length. Place directly on the oven rack covered with baking paper or baking mats.
  5. Brush each puff pastry with egg yolk using the brush.
  6. Bake the puff pastry for 20 minutes by turning it over at half-time.
  7. In a small bowl, prepare the sauce by mixing the plain yogurt with 1 tablespoon lemon juice, salt and pepper.
