During the month of January following the Christmas season, it is a tradition to eat a crusty King Pie with your family or friends.During the feast of Epiphany, the 6th of January, the lucky one who finds the “fève” in the pie (which can be a real traditional broad bean, or most commonly nowadays a porcelain figurine or a plastic one) becomes King or Queen. The newly crowned can then choose her King or his Queen.This festival was originally a Roman festival but became a Christian one through times.  It now reminds the visit of the Magi to the Christ Child. In any event, this frangipane base King pie recipe is delicious !

Ingredients

Crème d'amandes

  1. Put in the bowl of the robot softened butter, eggs, rum, vanilla, almond powder and icing sugar. Activate the K drummer and mix slowly at first speed. Then change to speed 1 for 1 minute and finally speed 2 for 2 minutes.
  2. On the first puff pastry placed on baking paper, pour the almond cream, (leave 2cm free all around the dough). Put the bean "fève".

  5. Percer la pâte de quelques petits trous pour permettre à l'air de s'échapper durant la cuisson.
  6. Bake at 464° F for 10 minutes then lower the temperature to 356°F for about twenty minutes while monitoring the cooking.
  7. La galette se sert de préférence tiède mais peut également être servie froide.
