Ingredients

  1. First, you need to remove the salmon fishbone using a sharp knife.
  2. Then, before to start the recipe, wrap your salmon fillet in a piece of food-quality film in the fridge for 1 hour, this will make it easier to slice for the next steps.
  3. In th meantime, stir together the lemon juice, the olive oil, chopped parsley, basil leaves, into a smooth dressing with a whip. Add salt and set aside.
  4. Then, after your salmon fillet has chilled enough in the fridge, slice it carefully as thinly as possible. You can use a special salmon knife. It will be easier to start by the fattest part of the fillet.
  5. It is now time to layer the ingredients of the recipee on a large plate (or platter). First, layer the (less beautiful) salmon slices in a single layer on a large plate or platter. Cover it with a few spoonfuls of the sauce you’ve made before. Spread your dressing over all slices. Repeat this step alternating layers until you have no more ingredients. Let chill for 1 hour again in the fridge.
  6. When you are ready to serve, mix the salad greens with a little bit of olive oil and salt. Add it on the top of the salmon carpaccio on the big platter. If you want to add a delicious cheese taste, add also some slices of parmesan cheese on the top the salmon carpaccio.
  7. Serve immediately to enjoy the best freshness of your salmon carpaccio !
