Ingredients
- 3 Kilograms
- sucre pour confiture (type Confisuc)
- 1.5 Kilograms
- water
- 75 centiliters
- Wash the apricots, remove the pits, and slice them in quarters.
- Keep some pits, which you can break to extract the almonds. The latters will be plunged into boiling water to prune them (remove the skin) and finally they will be divided in halves.
- Put 750 ml of water to boil with the sugar for 1 minute and then add the fruits. Cook on high heat while frequently stirring for 35 minutes. From time to time skim foam from the surface of the jam.
- To check the setting point of the jam, a little liquid is placed on a chilled plate. It must solidify without flowing.
- Add the almonds to the jam and mix thoroughly.
- The jam is then ready to be poured into the jars. The latter having been sterilized with hot water and left to dry on a clean cloth.
- Fill the jars with jam. Close them and turn them over for 15 mins. This allows evacuation of excess air for a better conservation.
