  1. Heat the water, milk, salt, sugar and butter.
  2. Once your mixture starts to boil, remove the pan from the heat and pour in the flour.
  3. Put on low heat for 1 minute let the dough dry out. Once you have removed the pan from the heat, continue stirring vigorously for about 4 to 5 minutes until it gives off no more steam.
  4. Add the eggs one by one, stirring to obtain a homogeneous paste, thick but with a slightly dropping consistency.
  5. Next, arrange your pastry mounds on a baking sheet using a pipping bag or a teaspoon. They should have a diameter of about 1 inch (3 cm) maximum.
  6. Bake at 170 °C (335 °F) for 40 minutes. You should absolutely avoid opening the oven because cold air could cause your pastry to collapse.
  7. While your choux pastry are being baked, prepare your chocolate sauce by melting the chocolate with 1 dl of water on low heat
  8. When serving open your pastry in 2. Fill them with a scoop of ice cream. Close them carefully and pour over the hot chocolate sauce.
