  1. Préchauffer le four à 180°.
  2. Faire revenir la viande en gros morceaux à l'huile durant 10mn avec les échalotes ciselées puis ajouter le vin, l'eau, le thym, le laurier et le cube de bouillon de volaille.
  3. Faire mijoter une dizaine de mn et rectifier l'assaisonnement avec sel et poivre.
  4. Dans un saladier mélanger les pommes de terre découpées en rondelles avec le beurre fondu, le sel et le poivre.
  5. Sortir la cocotte du four et ôter thym et laurier.
  6. Disposer les tranches de pommes de terre en rosace sur le dessus de la cocotte puis remettre au four 35mn sans couvrir.
