Ingredients

Metric US
Veal shank
4 slices
Flour
50 grams
Button mushrooms
250 grams
chopped tomatoes
600 grams
white wine
1 glass
Beef stock
1/2 liter
Thyme and laurel
Olive oil
salt and pepper
  1. Place the veal shanks in the flour and coat well.
  2. Then brown them with olive oil and add the mushrooms (washed, drained and cut into quarters or whole if they are small).
  3. Sauté for 4 to 5 minutes and incorporate the tomatoes, herbs, wine and broth then salt and pepper to taste.
  4. Simmer under cover for 1h10 by adding wine or water during cooking if the sauce has become too thick.
