- Veal shank
- 4 slices

- Button mushrooms
- 250 grams
- chopped tomatoes
- 600 grams
- white wine

- Beef stock
- 1/2 liter
- Thyme and laurel
- Olive oil
- salt and pepper
- Place the veal shanks in the flour and coat well.
- Then brown them with olive oil and add the mushrooms (washed, drained and cut into quarters or whole if they are small).
- Sauté for 4 to 5 minutes and incorporate the tomatoes, herbs, wine and broth then salt and pepper to taste.
- Simmer under cover for 1h10 by adding wine or water during cooking if the sauce has become too thick.
