This sauce, which was created in the 17th century, is named after Louis de Béchameil, maitre d’hôtel of King Louis XIV. She was then named Bechamelle and Bechamel. It is used in a multitude of dishes such as gratins (endive, cauliflower …), lasagna, croque-monsieur, stuffed crepes, moussaka etc …

- In a salad bowl melt the butter 1 min in the microwave.
- Then add the flour and mix well together.
- Then pour on this mixture the milk that has been boiled beforehand and stir energetically.
- Put everything 1mn in the microwave and whisk well to obtain a perfectly homogeneous sauce, season with salt and pepper before use.
