Ingredients

  1. Wash and then cut strawberries and cut into pieces.
  2. In a bowl, alternate layers of fruit and sugar and wet with lemon juice.
  3. Let the strawberries release their juice for a few hours.
  4. Drain the strawberries and pour the juice into a jam pan or a stockpot.
  5. Heat over high heat for 10 minutes then add the strawberries and cook about forty minutes checking the consistency of the syrup on a cold plate.
  6. Unlike other jams, strawberries should be allowed to cool before potting so they do not rise to the surface.
