- Break the chocolate into small pieces and melt it in a double boiler or over low heat. Stir gently to obtain a smooth texture.
- Separate the whites from the yolks. Whisk the whites till you obtain peaks while adding the sugar.
- In a mixing bowl pour the melted chocolate over the egg whites, stirring gradually with a spatula until the chocolate is well incorporated into the whites.
- Pour into verrines or ramekins. Set in a cool place for at least 2 hours.
- Decorate with cocoa powder and chocolate shavings before serving. Enjoy!
